Even then, they sometimes stop operations before they run out of the soybeans, the main ingredient. People line up every summer to eat there for the taste they waited a year for. The person leading everything at this place is Mr. Jeon Jae-beol. He is the son who is striving to carry on his mother's legacy, who opened the restaurant in 1974, and preserve her taste exactly as it was. What he cherishes most is none other than soybeans! He says this is because soybeans are the foundation and core of soybean noodles. Therefore, his principle is to use only high-quality soybeans produced in Yeonggwang, Jeonnam, a region his mother has been trading with since her time. He purchases all the soybeans he will use for the year at once, and closes the shop once they run out. He is said to be a man who takes more pride in soybeans than anyone else. Let's go taste Mr. Jeon Jae-beol's soybean noodles, which contain his parents' memories and his own life story. At the ‘Gwangyang 5-Day Market,’ which opens on the 1st and 6th of every month, there is a steaming noodle shop that has been around for 52 years, providing hearty comfort to the chilled stomachs of visitors braving the cold winds to visit. Ms. Lee In-soon says she started her noodle business nearly 40 years ago by setting up a tent and selling noodles at the market to help her mother. She opens her shop for just one day a week while farming! The shop is bustling with long-time regulars who make a special trip to taste the rich broth of the banquet noodles, made using the exact method she learned from her mother, and a bowl of red bean kalguksu made with domestic red beans. Word of mouth is spreading not only for the taste but also for her overflowing generosity. Daegu Metropolitan City is considered the hottest city in Korea, earning the nickname ‘Daefrica’ (Daegu + Africa). In particular, Daegu has an extraordinary love for noodles, ranking first in the nation for noodle consumption. As if to prove this, Daegu Seomun Market features a ‘Noodle Alley’ lined with noodle shops. Here, cold noodles are a special delicacy that allows anyone to cool off from the heat at an affordable price! It is said that you can enjoy Janchi-guksu and Kal-guksu—dishes typically thought to be eaten warm—as cold noodle dishes—and one wonders just what they taste like! At the edge of Macheonsanryeong, a mountain shaped like a thirsty horse drinking from a stream, lies Donggok-ri, named for its abundance of paulownia trees. Although it is a remote neighborhood located about 50 minutes by car from downtown Daegu, there is a famous noodle shop that never ceases to attract foodies. Unlike other noodles that use anchovy broth as a base, this one is milky white like beef bone broth, yet it is said to have a special flavor that feels deep and clean while appearing somewhat bland. The secret lies in the noodle water! This is made possible by using noodles that are kneaded and pulled by hand instead of regular wheat flour noodles. What is the taste of this special noodle dish, which is not easily found elsewhere, like? Not Yukgaejang, but Yukguksu! Gyeongsan-si, Gyeongsangbuk-do, located just over 30 minutes by car from Daegu. Although it belongs to Gyeongsangbuk-do, it is a city close enough to share Daegu Metropolitan City’s area code ‘053’ instead of ‘054’. Here, there is a unique noodle dish that makes visitors go the extra mile to find it. The star is ‘Yukguksu,’ flavored with large chunks of beef and a mountain of green onions and radishes! At first glance, it looks like noodles added to Yukgaejang, but its clean, non-intense spiciness is said to possess a charm distinct from the thick broth of Yukgaejang.
