Thank you for your support! 🍝Spaghetti Squash Recipe🍝 Ingredients: 1 medium to large spaghetti squash, 1/4 cup high quality olive oil, a few pinches of salt. Equipment: Oven, microwave, serrated knife, rimmed baking tray, parchment paper, pastry brush, spoon/ice cream scoop, fork, oven mitts. Instructions: Remove all stickers from spaghetti squash then wash and dry it. NOTE: when working with spaghetti squash, always be extremely careful, as they can be slippery, tough, and unwieldy. You can do the following hack to make slicing it easier: puncture the squash with a fork in multiple locations on the top side. Then use the fork to puncture the squash in those same locations again, penetrating the surface a little bit deeper. This helps to vent the squash during our next step. Place the squash in the microwave for 3 to 5 minutes with the punctured side facing up. Please make sure it doesn’t burn (the length of time will depend on the strength of your microwave). Carefully remove it with oven mitts (it will be hot), and let it cool down for several minutes. Once cool, flip the squash over and cut the squash into two pieces lengthwise, with a long, serrated knife (mine is 8" long). Start slicing from the bottom (the non-pricked side) and work your way around to the top, until you have cut it in two. You should find that slicing should be much easier now. Please still be extremely careful when cutting into the squash. Pre-heat oven to 400°F. Then use a large spoon or an ice cream scoop to gut the squash, removing the seeds and the pulp (very similar to working with a pumpkin). Be sure to stop scooping once you hit the magical spaghetti squash layer (as visualized in the video). Place both spaghetti squash halves onto the lined baking tray, facing up. Dip the brush in olive oil and coat the inside of the spaghetti squash thoroughly, allowing it to penetrate the surface. Drizzle any remaining olive oil over each squash half. (NOTE: You can also use an avocado oil spray or olive oil spray instead.) Then sprinkle salt over the tops of each half. Turn each squash over so that they are cut side down on the tray. Bake the spaghetti squash in the oven for 30-40 minutes at 400°F or until lightly browned on the outside. When done, they should be fork tender, but still a little bit firm. The time will vary based on the size of your squash. A larger squash might take a little more time. Once the squash is ready, take it out of the oven, and carefully flip the squash over so that they are cut side up. Allow them to cool a few minutes in this position. Once they are cool enough to work with, you will take a fork and start to pull apart the magical spaghetti squash layers. Fluff and scrape the strands from the inside of the squash, going one section at a time, until you’ve created two “bowls” of spaghetti squash. Feel free to leave them in their natural shell to serve them, as the presentation is really beautiful. Then top with your favorite pasta sauce and some shredded parmesan. Then serve and enjoy!
