Brookie Cookies ♡ Bake with me

These Brookie Cookies are the perfect mix of fudgy brownie and classic chocolate chip cookies 🍪🍫 Soft, gooey and packed with chunks of chocolate in every bite! ✨ Makes around 6–8 large cookies Main Dough • 115g butter, melted (1/2 cup) • 120g light brown sugar (1/2 cup + 2 tbsp) • 50g granulated sugar (1/4 cup) • 1 medium egg • 1 tsp vanilla extract • 1/2 tsp baking powder • 1/2 tsp bicarbonate of soda • 1 tsp salt Brownie Dough • 75g plain flour (1/2 cup + 1 tbsp) • 15g cocoa powder (2 tbsp) • 100g white chocolate chunks (1/2 cup) Cookie Dough • 90g plain flour (3/4 cup) • 100g milk chocolate chunks (1/2 cup) 👩‍🍳 Method: 1. Melt the butter and whisk together with both sugars until smooth. 2. Add the egg, vanilla, baking powder, bicarbonate of soda and salt. Whisk until slightly lighter in colour. 3. Weigh the mixture and divide evenly into two bowls. 4. In one bowl, mix in the flour and cocoa powder, then fold through the white chocolate chunks. 5. In the second bowl, mix in the flour, then fold through the milk chocolate chunks. 6. Weigh the doughs into 40g pieces. 7. Divide the 40g pieces into 3 and stack the brownie and cookie dough together to create a marble effect. 8. Freeze for 30 minutes. 9.
