Soft Sour Cherry Cake | Homemade Yogurt Cake Recipe

Prepare the cherries Remove the seeds from the sour cherries carefully. Toss them gently with flour, cornstarch, and a little sugar (if needed). Set aside. --- 2. Make the batter In a large bowl, whisk the eggs, sugar, and vanilla until light and slightly fluffy. Slowly add the oil and Greek yogurt, mixing until smooth and well combined. In another bowl, sift together flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture. Mix gently just until no dry flour remains. --- 3. Assemble the cake Pour the batter into a greased 23 cm (9-inch) cake pan. Scatter the prepared sour cherries evenly over the batter. Gently press a few into the surface. --- 4. Bake Bake in a preheated oven at 180°C (350°F) for 45–55 minutes, or until a toothpick inserted in the center comes out clean. --- 5. Cool & decorate Let the cake cool slightly before removing it from the pan.
