You can reduce or increase the sugar in each layer as you like. ✅ If you don’t have starch on hand, you can thicken the cherry and quark layers with semolina instead. ✅ If the quark is very dry, you don’t need to thicken it at all. ✅ You can substitute cherries with other berries or fruits. ✅ You can use quark with any fat content. The only important thing is that it’s neither sour nor too watery. If the quark is grainy, it’s best to briefly puree it with a hand blender.
