Mixed Stuffed Vegetable Recipe 🍅 Ingredients Vegetables: 2 zucchini (cut into 3 pieces and hollowed out) 1 eggplant (cut into 3 pieces and hollowed out) 10 bell peppers (tops removed and insides cleaned) Filling: 2 cups washed rice Approximately 2 tablespoons tomato paste 1 teacup vegetable oil 2 tomatoes (finely chopped) 1 dry onion (finely chopped) 2 cloves garlic (grated) A quarter bunch parsley & a quarter bunch dill (finely chopped) Half teaspoon red pepper flakes, black pepper, mint, sumac Juice of half a lemon 3 tablespoons pomegranate molasses (optional) 1 tablespoon salt For the Sauce: 3 cups hot water 1 teaspoon tomato paste 1 1 teaspoon sumac 👩‍🍳 Preparation In a large bowl, mix all the ingredients for the filling well with a spoon. Fill the zucchini, eggplant, and peppers with the prepared filling. Place a slice of tomato on top of each to prevent them from swelling and overflowing, and arrange them in a pot. In a separate bowl, mix hot water, 1 teaspoon of tomato paste, and 1 teaspoon of sumac well, and pour it over the stuffed vegetables in the pot. Cover the stuffed vegetables with a plate and place the pot on the stove.
