Carrot, oats, and apple — no sugar, no white flour! This is my favorite healthy oatmeal cake, and it's perfect if you're trying to stay in shape without giving up dessert. ❤️ Hello, friends, and welcome back to my kitchen! Today I'm sharing a cake you can truly feel good about. It's soft, tender, and perfectly moist, sweetened naturally with apple and honey, and made with homemade oat flour instead of white flour. Every slice is packed with carrots, walnuts, and juicy raisins, all topped with a light, healthier cream cheese frosting. 🥰 This is the kind of treat I love most — wholesome enough to enjoy without a second thought, but every bit as delicious as a classic cake. I hope it becomes a favorite in your home too! 🥕 WHAT YOU'LL NEED 🥕 FOR THE CAKE: 1½ cups rolled oats (blended into flour) A handful of walnuts, finely chopped ¾ tablespoon ground cinnamon 2 carrots, finely grated 1 sweet apple (Gala, Fuji, or Golden Delicious), grated 4½ tablespoons Greek yogurt or sour cream 2 eggs (room temperature) A pinch of salt A few tablespoons honey Zest of 1 lemon 1 tablespoon raisins (soaked in hot water 10 min) Vegetable or melted coconut oil A little baking soda + lemon juice FOR THE OAT TOPPING: 3 tablespoons rolled oats 1 tablespoon vegetable or melted coconut oil 1 teaspoon ground cinnamon 1 tablespoon honey FOR THE FROSTING: Cream cheese or ricotta 2 tablespoons Greek yogurt or sour cream A few splashes vanilla extract A little lemon juice + a touch of honey Almond flakes, to finish 👩‍🍳 HOW TO MAKE IT 👩‍🍳 Blend oats into flour; mix with walnuts and cinnamon. Combine grated carrot and apple, then fold in yogurt. Beat the eggs with salt and stir in, along with honey, lemon zest, and soaked raisins. Add oil, then combine with the oat flour into a soft batter. Stir in baking soda topped with lemon juice. Pour into a buttered, parchment-lined 8-inch springform pan. Top with the oat crumble and bake at the temperature below for 50–55 minutes until golden. Cool, then frost with the cream cheese mixture and sprinkle with almond flakes. Chill at least 30 minutes before slicing. 💛 KAREN'S TIPS 💛 Soak the raisins so they stay juicy and don't dry out the cake. Sweet apples add natural sweetness — no extra sugar needed.
