If you've ever stood in front of the fridge wondering what to make for dinner, this recipe is for you. It's hearty, satisfying, and made with simple ingredients — the kind of meal the whole family gathers around. My own grandchildren adore this one, and I make it for them nearly every weekend! 🥰 Everything comes together beautifully: juicy, well-seasoned cutlets with a golden mozzarella topping, potatoes and sweet peppers baked underneath, and a crisp, fresh salad to round it all out. A complete dinner, all made with love. 🍽️ WHAT YOU'LL NEED 🍽️ FOR THE CUTLETS: 2.2 lb (1000 g) minced meat 1 egg Salt & ground black pepper ½ teaspoon dried garlic 1 teaspoon smoked paprika 1 teaspoon coriander 2 tablespoons flour 1 onion + 1 carrot Vegetable oil & butter Fresh parsley + 2 garlic cloves 4.2 oz (120 g) mozzarella cheese FOR THE POTATOES: 3–4 potatoes Olive oil, salt, dried garlic, dried herbs 1 sweet red pepper FOR THE SALAD: Lettuce leaves Red onion Canned corn Dill 3.5 oz (100 g) mushrooms 2 garlic cloves Salt, black pepper, olive oil 👩🍳 HOW TO MAKE IT 👩🍳 Mix the meat with egg, seasonings, spices, and flour. Sauté onion and grated carrot in oil and butter, then fold into the meat with parsley and garlic. Cover and rest the meat 20 minutes. Fry seasoned potato slices until golden, then place in a baking dish with sliced red pepper. Shape the meat into cutlets (about 20), arrange over the potatoes, and top with mozzarella. Bake at 180°C (356°F) for 45–50 minutes. Cook the mushrooms, then build a fresh salad with lettuce, red onion, corn, dill, mushrooms, garlic, and olive oil. Serve and enjoy! 💛 KAREN'S TIPS 💛 Don't overmix the meat, or the cutlets can turn tough. Test-cook a pinch to check the seasoning before shaping. Wet your hands to shape the cutlets more easily.
