Today I'm showing you how to make beautiful cream puffs from scratch, using everyday ingredients and nothing fancier than a plastic bag with the corner snipped off. No special nozzles, no expensive equipment — just a few simple steps and a little patience, and you'll have golden, crisp puffs filled with the most delicate custard. 🥰 These are always such a joy to make, and they never fail to impress. Once you see how the choux pastry comes together, you'll want to make them again and again! 🥐 WHAT YOU'LL NEED 🥐 FOR THE CHOUX PASTRY: Water A pinch of salt Butter Flour Eggs (added one at a time) FOR THE CUSTARD CREAM: 2 tablespoons all-purpose flour 3 tablespoons sugar A pinch of salt 3 egg yolks (room temperature) Milk A little extra sugar (for the pan) Vanilla extract Heavy cream (optional, for extra richness) 👩‍🍳 HOW TO MAKE THEM 👩‍🍳 Heat water, salt, and butter over medium heat until just boiling. Add the flour and stir until smooth and thick, then dry the dough 3–5 minutes. Cool the dough, then beat in the eggs one at a time until smooth, shiny, and slightly elastic. Pipe into ping-pong-sized rounds, smooth the peaks, and bake (temperature and time below). Don't open the oven for the first 20 minutes! For the custard: mix flour, sugar, and salt; warm the milk (sugar in the pan prevents scorching). Whisk the dry mix into the milk, temper the egg yolks, then cook gently until thick. Strain, cover with wrap on the surface, and chill at least 30 minutes. Fold in whipped cream if using, then fill the cooled puffs. 💛 KAREN'S TIPS 💛 Medium heat is key for smooth choux pastry. Drying the dough helps the puffs hold their shape. Add the eggs one at a time — aim for smooth, shiny, and slightly elastic. Don't open the oven door for the first 20 minutes, or they may collapse.
