Click here for the recruitment form: https://www.sanpi-ryoron.com/recruit/ ■ Stir-fried Chicken Liver and Chives (Serves 2-3) [Ingredients] 300g chicken liver, 1/2 chives, 1/2 onion, 50g carrots, 100g bean sprouts, some flour, 2 tablespoons vegetable oil, a pinch of salt, a pinch of pepper, a pinch of potato starch dissolved in water A (1 tablespoon sake, 1 tablespoon mirin, 1 tablespoon soy sauce, 1 teaspoon sugar, 1 tablespoon oyster sauce, 1 teaspoon vinegar) [Directions] 1. Cut the chives into 4cm lengths. Thinly slice the onion. Cut the carrot into 4cm strips. 2. Cut the liver into bite-sized pieces, removing any blood clots. Rinse lightly with water, pat dry, and coat with flour. *You can also coat the binding parts with flour and fry them together. ③ Add salad oil (1 tablespoon) to a frying pan. Put the oil over medium heat and once it's hot, add the livers, making sure they don't overlap. Sprinkle with a little salt and pepper. Fry until crispy on both sides and remove from the frying pan. *Frying time is approximately 3 minutes. ④ Once the frying pan is fairly clean, add salad oil (1 tablespoon) and heat over medium heat. Sprinkle the onion and carrot with a little salt and fry until soft. Add the bean sprouts and chives, in that order. Stir-fry quickly. ⑤ Add ingredients A to the remaining space in the frying pan. Bring to a boil, then add the livers back in and quickly stir-fry everything together. *You can prepare ingredients A first. Season with salt and pepper. Thicken lightly with water-dissolved potato starch, if desired. Serve in a serving dish.
