Hey everyone! Hope you're all doing well. ❤️ Summer is officially here in Melbourne with Daylight Saving Time in full swing – the days are getting longer and warmer! 🥰🍃To celebrate the cozy vibes of this season (and the Mid-Autumn Festival!), I'm bringing you a very special and comforting night routine. On tonight's menu: 🍜 Kimchi beef Ramen: A spicy, savory, and incredibly satisfying bowl of goodness. 🥞 Vegetable & Shrimp Pancakes: Crispy on the outside, soft on the inside – the perfect side dish. 🥮 Homemade Mooncakes! In the spirit of the Mid-Autumn Festival, I tried my hand at making these traditional treats. They were a labor of love and so delicious! It was such a warm, delicious, and truly cozy evening filled with good food and good vibes. Wishing everyone who celebrated a very happy and bright Mid-Autumn Festival! If you like, please subscribe to the channel    / @vikiindahouse   Email [email protected] --- Kimchi Beef Ramen 🧑‍🍳Ingredients: · 1 package of instant kimchi ramen · 1 clove garlic, finely minced · 1 tablespoon Japanese Kewpie mayonnaise (or regular mayo) · 1 pasteurized egg · 4-5 thin slices of beef · Sliced green onion Instructions: 1. Make the Flavor Base: In your serving bowl, combine the ramen seasoning packet, minced garlic, mayonnaise, and the pasteurized egg. Whisk vigorously until you have a smooth, uniform sauce. 2. Cook the Noodles:cook the ramen noodles according to the package directions. About 1 minute before the noodles are done, add the thin beef slices to the pot to cook through. 3. Temper the Sauce: Just before the noodles are finished, scoop out about two ladlefuls of the hot noodle cooking water. 4. Assemble the Bowl: Top with sliced green onion and enjoy immediately! 🦐Crispy Vegetable & Shrimp Pancakes 🧑‍🍳Ingredients: · 1 cup carrot · 1 cup zucchini · ½ teaspoon salt · ½ cup shrimp, peeled, deveined · 2 tablespoons all-purpose flour · 1 tablespoon cornstarch (or potato starch) · 1 large egg · ¼ teaspoon black pepper Instructions: 1. Prepare the Vegetables: In a medium bowl, combine the grated carrot and zucchini. Sprinkle with the salt and mix well. Let it sit for 5-7 minutes. Using your hands or a clean cloth, squeeze out as much excess water as possible. 2. Combine the Batter: Add the chopped shrimp, all-purpose flour, cornstarch, egg, and black pepper. Mix everything together until well combined and a loose batter forms. 3. Pan-Fry: Scoop about 2 tablespoons of the mixture for each pancake, flattening them slightly in the pan. Cook for 2-3 minutes on each side, until golden brown and crispy. --- 🥮🍪No-Bake Oreo Mooncakes 🧑‍🍳Ingredients: · For the Filling: · 80g cream cheese, softened · 6g sugar · 20g Oreo crumbs (from the cookie part, without the filling) · For the "Snowskin" Wrapper: · 70g Oreo crumbs (from the cookie part, without the filling) · 30g milk Instructions: 1. Make the Filling: In a bowl, combine the 80g softened cream cheese and 6g sugar. Mix until smooth and creamy. Gently fold in the 20g of Oreo crumbs until just combined. 2. Shape & Freeze the Filling: Scoop the mixture into a piping bag. Pipe it into four equal portions onto a parchment-lined plate or tray. Place them in the freezer for 40 minutes until firm. 3. Make the Wrapper: In a separate bowl, combine the 70g of Oreo crumbs with the 30g milk. Stir until the mixture comes together into a soft, pliable dough that resembles wet sand. 4. Assemble the Mooncakes: Divide the Oreo dough into four equal portions. Take one portion and flatten it in the palm of your hand into a small disc. Place one frozen cream cheese filling ball in the center. Gently wrap the Oreo dough around the filling, pinching to seal completely and form a smooth ball. 5. Press into Shape: Place the assembled ball into the mold and press firmly to form the mooncake shape.
