Recipe🍀 280g All-purpose flour ¼ tsp baking soda ½ tsp baking powder 1 tsp cornstarch 227g cooled unsalted butter 200g brown sugar 30g granulated sugar 1egg + 1egg yolk (cold) 1tbsp vanilla extract 150g dark chocolate chips 100g milk chocolate chunks Pinch of salt 80-100g walnuts Instructions: 1) Add cold cubed butter to a bowl or stand mixer and beat until smooth and creamy, about 2 minutes. 2) Add the brown sugar and granulated sugar, then mix again for 1-2 minutes until light and fluffy. 3) Add the egg, egg yolk, and vanilla bean paste, then beat until fully combined and creamy. 4) In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cornstarch. 5) Add dry ingredients into the wet mixture. Mix with the chocolate and walnuts. don’t overmix. 6) Weigh the dough into tall 170g cookie balls and place them on a baking sheet. Freeze for at least 2 hours or overnight for the best texture. 7) When ready to bake, preheat the oven to 180°C. Place 3–4 cookies per baking sheet, leaving plenty of space between each one. Bake for 16–18 minutes, until the edges are golden and crisp while the center stays soft and chewy.
