Rich chocolate mousse topped with light, freshly whipped Chantilly cream the perfect balance of intense chocolate and delicate sweetness👌 Recipe🍀 Ingredients: 100g 52% chocolate 40g butter 80g egg yolks 40g sugar (divided) 90g egg whites Method: 1) Melt the chocolate over a bain-marie. Add the butter and stir until smooth. 2) Whisk the egg yolks with 20g sugar over a bain-marie until they reach 68–71°C. 3) Whip the egg whites with the remaining 20 g sugar to medium peaks. 4) Add the yolk mixture to the chocolate and mix until smooth. 5) Allow the mixture to cool to 34–35°C. 6) Fold in the meringue until fully incorporated. 7) Portion into serving glasses and chill for at least 4 hours. 8) Whip the cream with icing sugar (and vanilla, if using) until soft peaks form. 9) Pipe or spoon the Chantilly cream over the chilled mousse before serving.
