Fold the dough in thirds and press the top and bottom halves together toward the center. Pinch the seams firmly to form a log. ④ Place in your favorite bun mold, or arrange on a baking tray. Cover with plastic wrap and a damp cloth and let rise for a second time until puffed (20 minutes or more using the oven's 40°C rise setting). *This time is only a guideline; check the bun progress frequently. *For instructions on how to make the bun mold, please refer to our previous post, "Make a Bun Mold with Parchment Paper." ⑤ Once the second rise is complete, brush with a whole egg (the remaining egg from the batter) and bake in a preheated oven at 200°C for 12 minutes. *Adjust the bake time according to the capabilities of your oven. — ...
