Creamy rice is a rice dish that falls somewhere between soupy and dry, and to achieve this, we must adhere to the rice-to-broth ratio, which in this case is one part rice to four parts broth. The cooking time and temperature are also crucial. Since we've used short-grain rice, and to achieve the perfect creaminess without overcooking, it's very important to cook it for a maximum of 17 minutes total. This will be just enough time to prevent the rice from becoming mushy. Furthermore, this rice doesn't tolerate waiting well, as it will continue to absorb broth while it's hot. That's why we must pay close attention to all the tips I share in the video, and one of the most important is sautéing the rice so that it remains loose and cooked through. To keep things simple, in this case, we've used seafood broth sold in cartons at supermarkets, and all the seafood used is frozen. This will not only save us money because it's much more economical, but it will also save us time since, for example, the clams come already cleaned and perfect for cooking directly in the rice.
