Click here for the recruitment form: https://www.sanpi-ryoron.com/recruit/ ■Beef Tendon Stew (Serves 3-4) [Ingredients] Approximately 500g beef tendon, 2 onions, 1/3 green onion, 1 sheet of konjac, 1 block of grilled tofu A (1200cc water, 200cc sake, 5g dashi kombu) B (150cc soy sauce, 4 tablespoons sugar) [Directions] 1. Cut the konjac into bite-sized pieces. Parboil in water for about 5 minutes, then drain in a colander. 2. Place the beef tendon in a pot, add plenty of water, and bring to a boil. Once boiling, reduce heat to low and simmer for about 20 minutes. 3. Cut the grilled tofu into bite-sized pieces. Chop the white part of the green onion into small pieces. Soak in water for a while to drain. Thinly slice the green part. Thinly slice the onion as well. ④ Wash the beef tendons from ② in water. Drain and cut into bite-sized pieces. ⑤ Put the beef tendons, onion, and green part of the green onion into a pot. Add ingredients A and bring to a boil. Skim off the scum. Cover with a drop lid and simmer over low heat for about an hour. *Add more water if it reduces during the cooking process. ⑥ Remove the kelp. Add ingredients B and the pre-cooked konjac. Cover with a drop lid and simmer over low heat for about 30 minutes. ⑦ Add sugar (about 1 tablespoon) to taste. Add the tofu and simmer over low heat for about 10 minutes. ⑧ Place in a serving dish and top with the white part of the green onion.
