Recruitment form here ↓ https://www.sanpi-ryoron.com/recruit/ ▪️Edamame Shinjo (3-4 servings) [Ingredients] 300g edamame, 2 pieces hanpen (fish cake), 50g yam, 1 egg yolk, a little green yuzu peel, 2 tablespoons cornstarch dissolved in water, 60cc salad oil, salt to taste A (2 tablespoons cornstarch, 2 pinches of salt) B (200cc dashi stock, 1 tablespoon light soy sauce, 1 tablespoon mirin, 1 pinch of salt) [Ingredients] ① Wash the edamame with water and put it in a bowl. Add salt (1 tablespoon) and rub it in. Let it sit for about 5 minutes. Put it in plenty of boiling water. Boil for about 2 and a half minutes while stirring, then drain in a colander. ② Tear the hanpen into pieces, put it in a bag and crush it. ③ Mash the yam with a knife until it becomes a paste. ④ Separate the egg yolks from the room-temperature eggs and place them in a bowl. Gradually add the salad oil (60cc) and mix with a whisk to make the egg mixture. ⑤ Put ②, ③, and ④ into a bowl, add A, and mix until smooth. ⑥ Once the edamame from ① has cooled slightly, remove the beans and add them to the bowl from ⑤. Mix well. Shape the mixture into balls by hand, arrange them on a tray, and place in a steamer. Once the steamer is full, reduce the heat to low and steam for about 12 minutes. ⑦ Put B into a pot and heat it. Once it boils, thicken with cornstarch dissolved in water (2 tablespoons). ⑧ Place the steamed fish cakes on a plate, pour the sauce from ⑦ over them, and sprinkle with grated green yuzu peel.
