Prep time: 8 minutes Serves: 3 (230g) Ingredients: 1 125g tin of mackerel in oil, drained 1 tin chickpeas, drained and rinsed 4 sun dried tomatoes in oil, drained 8 pitted black kalamata olives 30g rocket 4 tbsp olive oil plus extra to drizzle Juice of ½ lemon 2 tbsp mixed seeds or Daily 30 2 slices rye bread, toasted ½ roasted red pepper from a jar, finely sliced (optional) Method: Put all of the ingredients except for the mixed seeds, bread and pepper (if using) into a blender and blitz until smooth (alternatively use a hand held stick blender). Season with salt and pepper. Spread a generous spoonful of the pate onto each slice of rye and top with seeds and roasted red pepper (if using).
