Prep time: 10-15 minutes Cook time: 35 minutes Serves: 4 Ingredients: 4 tbsp olive oil plus extra to drizzle 2 tsp cumin ½ tsp turmeric ½ tsp paprika 1 medium cauliflower, cut into small florets , outer leaves roughly chopped 1 red onion, peeled and cut into wedges 3 peppers, seeds removed and sliced into 1 cm wide strips 1 400g tin of butterbeans, drained and rinsed 50g rocket 10g coriander, roughly chopped 2 tbsp pumpkin or sunflower seeds to garnish 2 tablespoons pomegranate seeds (optional) Miso- tahini dressing: 2 tbsp tahini 2 tbsp greek yoghurt Juice of ½ lemon 1 tsp white miso 2-3 tbsp of cold water With thanks to Natoora for providing the ingredients for this series. In a small bowl mix together the olive oil, cumin, turmeric and paprika. Season generously with salt and pepper. Lay the cauliflower, onions, peppers and beans onto a large baking tray (divide them between two trays if they are too cluttered). Drizzle the spiced olive oil all over, toss until thoroughly coated and roast for 30-35 minutes, until the cauliflower is tender and the beans are slightly crispy and bursting open. Whisk together the tahini, yogurt, lemon juice and miso. Add water, one tablespoon at a time, until you reach a creamy, pourable consistency.
