Preheat the oven to 200°C (390°F) 2. Dice the vegetables and transfer them to a baking sheet lined with parchment paper. 3. Season with olive oil and salt and the pepper, then place in the oven for about 15 minutes. 4. Meanwhile, place the shrimp, soy sauce, honey, salt, and pepper in a bowl and mix well until thoroughly combined. Set aside. 5. In another bowl, combine all the sauce ingredients and whisk well until smooth. Set aside. 6.
