93yr old Dirce makes traditional bread dumplings called canederli | Pasta Grannies

We’re feeling very honoured to be asked to collaborate with the Milano Cortina Winter Olympics, who have asked Pasta Grannies to showcase the region’s gastronomy. And this week it’s the turn of Dirce and her alpine bread dumplings called canederli. While they are great for filling up hungry medal-winning skiers and Dirce’s are absolutely delicious. I think the secret ingredient is the fat the bread is coated in. Here's her recipe: 60g lardo tirolese (cured pork fat) 50g luganega (salame) 100g speck 250g white bread crumbs 3 eggs 125ml whole milk 1 tablespoon of flour some parsley salt 125g butter a few sage leaves some parmesan cheese Buon appetito! 🍝 Take a seat at our kitchen table: https://www.pastagrannies.com 🍝
