Reprofiling and Thinning a Shun Classic Chef Knife

Shun is the number one selling Japanese knife in America. Unfortunately the end user wasn't quite ready for their thinness and brittleness. Also, the professional sharpener was not sure how to sharpen or maintain these thin blades. Here we have an over sharpened knife lastly sharpened with a convex edge, and major steel removal in the heel.
