Fixing a Sad Tsunehisa 180mm Santoku?

If you're bored of all the grinding in the middle of this video skip to 30:00 to see the end results, it's worth it. 20 minutes to grind blue super! This sad knife may have been a santoku originally but has been over sharpened to an unrecognizable profile. Watch as I reprofile it back in to a gyuto, then thin it and finally etch it to make it look as good as new. No offense to the customer who brought it in but sometimes I just have to wonder how they were even using this knife. All work done freehand on a Grizzly variable speed 2x42 with my signature Swanson ProStyle Radius platen, using 60, 80, 120, 240, and 400 grit belts. Like and share this vid.
