Ingredients: Rice -          80 ml rice -          100 ml water Parcels -          1 chicken breast, cut into ¼ inch slices -          1 piece ginger, cut into matchsticks -          1 Thai red chili, roughly chopped -          1 napa cabbage leaf, cut into 2 inch squares and blanched -          1 green onion, roughly chopped Marinade -          2 teaspoons cornstarch -          1 tablespoon water -          1 teaspoon soy sauce -          1 teaspoon oyster sauce -          ¼ teaspoon baking soda -          Pinch ground white pepper   Instructions: 1. Start by slicing 1 chicken breast into ¼ inch slices. Marinate the chicken in 2 teaspoons of cornstarch, 1 tablespoon of water, 1 teaspoon of soy sauce, ½ teaspoon of oyster sauce, ¼ teaspoon of baking soda and a pinch of ground white pepper. 2. Slice small piece of ginger into approximately 6 match sticks. Chop up a Chili pepper - I used Thai Red Chili Pepper. Chop up 1 napa cabbage leaf and into 2 inch squares. Roughly chop 1 green onion. 3. Next, cut up some parchment paper into approximately 8 x 16-inch rectangles. You’ll need two of these. Place half of the cabbage in the centre of one piece of parchment. Then, place half the chicken on top of the cabbage. Top off the chicken with half of the ginger, half of the chili (or as much as you can handle) and half of the green onion. Fold the parchment  paper to create a parcel. Repeat with the second parchment paper and the remaining ingredients. 5. In the large metal bowl, prepare a single portion of rice.  For us, that would be 80 ml of uncooked rice, which is two cups of the little cup that comes with the itaki pro. Next, wash your rice 3 times.  Finally, add an equal amount of water as your rice to your rice plus an extra 1/2 cup.  For our 80 ml of rice, we’re going to be adding 100 ml of water. Place the parcels on top of the rice. Place the plastic lid onto the metal bowl, and put everything in the fridge for later.  Ok, so it’s lunch time. Let’s cook! 6. Open up the itaki pro. Add 2 cups of water to the heating plate of the itaki pro and then stack the metal bowls on top of the heating plate. Close up the itaki pro, plug in the unit and push the button. 40 minutes later, come back and your lunch is done cooking.  Open up the itaki pro and check the chicken to make sure that it’s fully cooked.  If not, add some more water to the heating plate and continue to let it steam for another 5 minutes covered. If it is cooked, open up the parcel and enjoy!
