While the cream is still hot, add the butter cubes, one by one, stirring until smooth. Let cool. Ganache 1. Melt the chocolate. 2. Add the cream and stir until smooth. 3. Once the ganache is ready, add the paste and food coloring, and stir well. 4. Place some of the ganache in a piping bag. 5. Set the rest aside. Cigarette Pate 1. Beat the butter and sugar in a mixer until fluffy. 2. Add the flour, then the egg whites. 3. Divide the dough into 5 parts for coloring. 4. For blue, mix navy blue and royal blue. 5. For red, use strawberry red food coloring. 6. For orange, use orange. 7. For yellow, mix flashing yellow and egg yolk yellow. 8. For green, use leaf green. 9. On a griddle, place a large piece of parchment paper with excess on the sides and secure it with tape to the bottom of the griddle. 10. Pipe the geometric pattern onto the side of the griddle. 11. In a piping bag with a pearl tip, place each color in a piping bag with a tip. 12. Fill in the colors according to the numbers in the pattern. 13. Do the same with another baking sheet; you will need two baking sheets in total. 14. Remove the geometric pattern from under the parchment paper. 15. Refrigerate. Shortcrust Pastry 1. Beat the butter and sugar in a stand mixer with a paddle attachment until fluffy. 2. Then, add the eggs one at a time until smooth. 3. Add the flour and finally the food coloring until you reach the desired color. 4. Place the batter in a piping bag with a serrated tip. 5. Remove the colored batters from the Ultra. With the batter in the piping bag and using the serrated tip with the smooth side up, create overlapping strips, filling the entire baking sheet. If necessary, use a spatula to gently blend the batter. 6. Repeat this process with both baking sheets. 7. Bake at 170 degrees Celsius until the batter no longer sticks to your finger when tested. 8.
