Hard-boil the eggs. Cut the chicken breast, eggs, Chinese cabbage, and cucumbers into thin strips. Finely chop the spring onions. Combine all the ingredients in a bowl and add the sweetcorn. For the dressing, whisk together the mayonnaise, mustard, olive oil, salt, pepper, and coriander.
