They conduct test milking of mares, take udder measurements, and collect hair follicles for DNA analysis. All this labor-intensive work is necessary to find genetic markers for milk production. The information obtained will later be added to the international NCBI database. Thanks to such databases, horse breeding in Kazakhstan is reaching a new level. In the future, farmers will be able to sample a young filly and immediately understand what the horse's milk production will be as an adult. 🐎We saw firsthand how strongly horses react to noise and the presence of strangers, such as our film crew and the team of scientists. Horses become stressed, instinctively saving milk for the foal, and as a result, milk yield drops by approximately 30%. For effective milking of mares, horses need a calm environment and a familiar milker. 🐎Separately, the specialists raised the crucial issue of preserving the gene pool. The unique genetics of local Kazakh horse breeds are currently being damaged by uncontrolled crossbreeding. Farmers often infuse draft horse blood for beef production and neglect strict animal control. But the indigenous Kazakh horse breed is unique in its incredible endurance, its ability to tolerate temperatures as low as -40 degrees Celsius, and its ability to thrive without artificial supplements. 🐎The taste and chemical composition of milk also always vary. These indicators depend on the grazing region, the season, and even the horse's age. Young mares produce sweeter milk due to their high glucose content, while older mares produce milk with increased acidity. Scientists believe the optimal age for milking is around five or six years. To ensure that kumiss production brings farmers a stable profit year-round, many leading farms are implementing long-term storage technologies. Properly prepared kumiss can be safely stored for over a year, making it suitable for sale regardless of spring foaling.
