PASTRY CREAM (VLA) DASAR DAN VARIASI RASANYA // PASTRY CREAM VARIATION
Hello, this time I want to make vla or pastry cream from 1 basic recipe that is made in various flavors. This cream can be used for so many things, for example: sus/eclair filling, cumcum/cornet pie, bombolini, tart/tartlet, bread/bakpao filling and even cake filling. in the next video I will make various desserts from this pastry cream. actually I have made a video of this pastry cream here ( • VLA // PASTRY CREAM (VANILLA, CHOCOLATE, M... ) but this one has changed the recipe a little. the milk and flour are added a little. if previously I just used cornstarch, here I mixed it 50:50 with flour. the difference is only in the color and a little taste. if you use flour the color is darker and there is a taste of cooked flour. but if you prefer to use cornstarch, you can just use full cornstarch.. the difference with the previous video, if the previous video uses the all-in-one method, so all the ingredients are put into the pan (except butter and vanilla) then cooked until they bubble and thicken. if this video uses the method of heating the milk first then tempering the eggs. the result? Not much different :D Good luck trying it :) *Oh yeah, the one in the video looks smaller because I made 1/4 of the recipe :) PASTRY CREAM RECIPE Makes: 1 cup (240ml) Ingredients: (*I've also written the gram-cup conversion, but please note: the spoons I use are measuring spoons. The cups I use are 240ml glasses) 2 egg yolks (if you want to make an eggless version, you can replace the 2 egg yolks with 1 tablespoon rice flour/cornstarch + 2 teaspoons custard powder) 200ml (3/4 cup + 4 teaspoons) liquid milk 10g (1 1/3 tablespoons) cornstarch 10g (1 1/4 tablespoons) medium-protein flour 30-50g (2 1/2 - 4 tablespoons) sugar 15g (1 tablespoon) unsalted butter 1/2 teaspoon vanilla paste Variations: chocolate: 1 Pastry cream recipe + 80g dark cooking chocolate + 2 tbsp cocoa powder Coffee: 1 pastry cream recipe + 1 tsp instant coffee Matcha: 1 pastry cream recipe + 1 tsp matcha powder Taro: 1 pastry cream recipe + 1 tsp taro powder Strawberry jam: 1 pastry cream recipe + 40g strawberry jam Nutella/peanut butter: 1 pastry cream recipe + 40g Nutella Caramel (you can see caramel at • KUMPULAN SAUS UNTUK DESSERT // DESSERT SAU... ): 1 pastry cream recipe + 40g caramel Cheese: 1 pastry cream recipe + 100g cream cheese/cheese spread Pandan: 1 pastry cream recipe but replace the milk with liquid coconut milk blended with 5 pandan leaves Fruit puree (durian/banana/other fruit): 1 pastry cream recipe but replace 100ml of the milk with the fruit puree. Reduce the sugar to 15-20g Canned/packaged/bottled drinks (such as Buavita): 1 pastry cream recipe, but replace the milk with 175ml of bottled juice and 25g of powdered milk. Reduce the sugar to 15-20g. Light pastry cream: 1 recipe pastry cream + 100-200ml whipping cream (if using powdered, 1 part whipping cream powder + 2 parts ice water).
