Classic Mauritian Meal|Lentils with Carrots|Mashed Potato ChutneyICoconut Chutney ISteamed Rice
Di Riz, Lentilles Carottes, Satini Pomme de Terre, Satini Coco This Mauritian Meal is a classic and is my favourite since I’m a kid. It is my go-to comfort food and today I’m showing you how to make it, just Iike my mum does it. The only thing that I would add to this is a piece of fried salted fish. Lentils (Lentilles) 1 Cup Brown Lentils (soaked for few hours or overnight) 1 Onion 3 Sprigs of Fresh Thyme ½ Cup Grated Carrots 1 Tbsp Ginger Garlic Paste 1 Tbsp Oil Salt to taste Drain lentils and place them in a pressure cooker. Add in 3 medium sized potatoes with skin on ** For potato chutney below: Add in about 700 ML water. Season with some salt. Close the cooker and cook on medium heat for 4 whistles. Remove from heat and allow the pressure to be released. Then open the pressure cooker. **Remove the potatoes. Check the lentils for doneness by pressing one of the grains. It should be soft. If not then return back to heat and cook for 2 more whistles. Heat oil in a mini saucepan. Add in the onion and thyme. Saute for 2-3 minutes then add in the ginger garlic paste. Saute for a minute then pour this mixture on our cooked lentils. Add in the grated carrot. Season with some more salt. Add in ½ cup water. Mix well. Cover and cook for another 2 whistles. Serve hot. Rice (Di Riz) 1 Cup Basmati Rice (soaked for 30 minutes) 2 Cups Water Drain rice and place it in a pan. Addin the water. Bring it to a soft boil on medium heat. Once it starts boiling, lower the heat and cover the rice. Let it steam on low for 10 minutes or until the rice is cooked. Fluff the rice up with a fork and serve hot. Mashed Potato Chutney (Satini Pomme De Terre) 3 Medium Sized Potatoes 1 Onion 1 Dried Chilli 1 Tbsp Oil ½ Tbsp Chopped Coriander Salt to taste ** Place potatoes in the pressure cooker with the lentils. When cooked, remove and place in cold water. Once they are cool enough to touch. Peel them and mash nicely with a fork or masher. Heat the oil in a small pan. Add in the onions and the dried chilli (break in 2 pieces). Fry until the onions brown a little and chilli becomes a bit crispy. Pour this mixture on the mashed potatoes. Add in salt to taste and some fresh coriander. Mix well using your hands. Shape in a ball and serve warm. Coconut Chutney (Satini Coco) ⅓ Cup Grated Fresh Coconut 1 Tbsp Dried Tamarind 1 Big Clove of Garlic 2 Green Chillies (optional) 6-8 Mint Leaves Salt to taste Place all ingredients except for salt in a food processor. Add in a few tablespoons of water and blend to a paste. Season with some salt.
