Kolasås - Caramel Sauce
Sure you can buy it from the store, but homemade caramel sauce tastes better and is easy to make. It only takes 15 minutes! This is a fantastic caramel sauce for apples, ice cream, cheesecake and coffee drink. ingredients: 1 dl sugar 0.5 dl full fat cream 0.5 dl water + a little lemon juice 1 tblspn of butter To get started, pour sugar into a saucepan and give it a small shake so that the sugar is flat in an even layer. Then add water mixed with some lemon juice, which should moisten all the sugar. Lemon juice reduces the risk of getting sugar crystals Turn the heat to medium and cook (do not stir!) Until the sugar dissolves in a clear syrup. It will look cloudy at first, but will eventually become a clear, bubbling liquid. You can see some spots of cloudy below where the sugar dissolves, as well as some clear spots Continue cooking the caramel and see when it starts to get a honey to amber color Do not leave the caramel out of sight and have cream standing aside. When the caramel has a golden color, like honey, turn off the heat and add the cream immediately. This prevents the caramel from continuing to boil. Continue stirring until the caramel has a uniform texture. At 106 degrees Celsius it is finished. Pour in the butter and stir. Right now the mixture looks very thin and flowing, but the cola sauce gets thicker when it cools. I think the caramel has the best consistency at room temperature.
