How to make Mapo Tofu Paitan Ramen
Mapo Tofu is a popular Chinese dish originated from Sichuan province. The main ingredient is tofu in a spicy sauce with various types of spices, stir fried with minced meat. For my recipe of Mapo Tofu Paitan Ramen, the soup is boiled from chicken and vegetable potage to make a thick paitan (creamy soup). The mapo tofu is made from silky tofu and a blend of spices & pepper to give a nice "numbing" kick with strong flavours. The result is a thick and savoury ramen broth, matched with thick handmade noodles to grip the soup for best experience. As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes. Hope you enjoy the video, please Like and Share with others if you do!
