First proof: 15 minutes. Place the dough in the freezer for 15 minutes, then rest it in the refrigerator for 30 minutes. Let the dough proof for about 1.5 hours until it doubles in size. For the egg wash, mix egg yolk, saffron, and vanilla, then brush it over the croissants. Bake in a preheated oven at 180°C (356°F) for 17–20 minutes.
