Traditional Durban Vegetable Biryani | South African Cooking
Vegetable Biryani is definitely an authentic Indian delight, and my veg biryani is no exception. This one is a guarantee flavour packed meal. Perfect for any occasion and very satisfying for both vegetarians and the carnivorous Vegetable Biryani Cooking time : Approx 1hr 30 minutes Preparation Boil the rice and biryani shall Chop up the veggies Ingredients Rice ( I'm using basmati rice) Biryani dhall Turmeric powder Salt for taste Mixed veg Gadhra beans Double beans Green beans Peas Potatoes For the Braise Oil Butter Onions For the curry Oil Onions Bay leaf Cinnamon stick Cardamom Clove Star anise Ginger garlic paste Tomotoes Curry leaf Thyme 1 tbspn turmeric powder 1 tbspn fennel powder 1 tbspn cumin powder 1 tbspn coriander powder 1 tbspn chilli powder 2 curry spoons masala Salt for taste water Method Boil the rice and biryani dhall half way. Whilst the rice is boiling add some turmeric and salt.Strain and set aside for later Boil the mixed vegetables I'm using gadhra beans, double beans, green beans and peas (boil for approx 15 mins) Marinate potatoes with turmeric powder and salt and fry till golden Fry a large diced onion in some oil and butter and set aside for garnishing later. For the curry. Add some oil to the pot followed by a large diced onion. Once translucent, add the whole spices (bay leaf, cinnamon, cardamom, clove, stars) Add the finger garlic paste and tomatoes, thyme and curry leaf. Follow with the ground spices ( turmeric, cumin, coriander, fennel, chilli and masala powder) Add a little water to loosen up the spices and stir. Add in the dried potatoes and cook for 10 mins. Follow with the mixed steamed veggies. Stir. Cook for a further 10 to 15 minutes. Start layering the rice. Add the Braise of fried onions and butter. Place the lot in the oven for 15 minutes or till the water has evaporated. Test by using a spoon to reach the bottom of the pot to check for excess water. Remove once done and mix the biryani gently Serving suggestions Veg biryani is best served with some dhall and salad, and Soji for dessert.
