Durban Style Rich Creamy Soji Cooking time: 45 minutes Preparation Soak, peel, cut and colour almonds Ingredients 500g Semolina 1 litre milk 1 tbspn vanilla essence 1 curry spoon sugar 1 tbspn egg yellow 1 can condensed milk 1 cinnamon stick 1 cardomam 2 tbspns cardomam powder 1/2 tspn nutmeg 500g butter Coloured almonds Dessert cream Method In a separate mixing bowl add and mix all the wet ingredients 500g milk, sugar, egg yellow, vanilla essence and condensed milk. whisk well and set aside. I'm another pot at the cinnamon and cardomam. Keep the flame low. after 5 mins add 300g butter. Once melted, add the semolina and stir. Keep stiring for about 10 to 15 mins. Proceed to add the cardomam powder and nutmeg powder and stir. Proceed with the wet ingredients. Pour in and keep stirring. Stir quickly so that the mixture doesn't get lumps or thicken too much. if the mixture is too thick add more milk as needed.
