🌿 Moringa Leaves Thokku | Traditional Murungai Keerai Thokku | Healthy South Indian Recipe 💚 Learn how to make authentic Moringa Leaves Thokku (Murungai Keerai Thokku), a flavorful traditional South Indian condiment packed with the goodness of moringa leaves. This delicious thokku pairs perfectly with hot rice, idli, dosa, chapati, or curd rice and can be stored for months when prepared and stored properly. 🌿 Ingredients 2 bunches moringa leaves 2 tsp cumin seeds 2 tsp peppercorns 1 tsp fenugreek seeds 2 tsp mustard seeds 2 tbsp coriander seeds Small lemon-sized tamarind 25 dry red chillies 10 tbsp sesame oil Vadagam – as needed 2 tbsp salt (adjust to taste) 👩‍🍳 Instructions 1. Remove the moringa leaves from the stems, wash thoroughly, and drain well. 2. Heat 2 tbsp sesame oil in a pan. Roast the coriander seeds, peppercorns, cumin seeds, fenugreek seeds, and dry red chillies for a few minutes. Finally, add the mustard seeds and roast briefly. 3. Add the moringa leaves and cook until they wilt, soften, and turn dark green. Add 1 tbsp salt, mix well, and allow the mixture to cool completely. 4. Transfer the cooled mixture to a mixer jar. Pulse once or twice for a coarse texture, then add the tamarind extract and grind just until smooth. Do not over-grind, as it can make the thokku taste slightly bitter. 5. In the same pan, heat the remaining sesame oil and add a little vadagam. Once aromatic, add the ground moringa mixture. 6. Add the remaining salt, mix well, cover, and cook over medium heat, stirring frequently to prevent sticking. 7. Continue cooking until the mixture becomes thick and glossy and the oil separates from the sides. 8. Allow the thokku to cool completely before transferring it to a clean, dry glass jar. 🫙 Storage Tips Store in a clean, dry glass jar. Always use a dry spoon.
