🥣🌿 Collagen-Boosting Drumstick Soup | Murungakkai Soup 🥣🌿 A nourishing, immunity-boosting soup made with the goodness of drumsticks, moringa leaf stems, tomatoes, and lentils. This comforting soup is perfect for supporting overall health, aiding digestion, and keeping you warm and energised! 🛒 Ingredients 🌿 Drumsticks – 4 🍅 Tomatoes – 4 🧅 Onions – 2 🌶️ Green chilies – 2 🧄 Garlic cloves – 5 🌾 Toor dal – 2 tbsp 🌱 Cumin seeds – 1 tbsp 💛 Turmeric powder – 1 tsp 🌿 A few moringa leaf stems 💧 Water – 4 cups 🍳 For the Tempering 🥥 Coconut oil – 1 tbsp 🧅 Shallots – A few (finely chopped) 🌿 Vadagam – 1 tsp 🧂 Salt – To taste 🌶️ Black pepper powder – ½ tsp (or to taste) 🌿 Fresh coriander leaves – For garnish 👩‍🍳 Method 1️⃣ Add the drumsticks, tomatoes, onions, green chilies, garlic, toor dal, cumin seeds, turmeric powder, moringa leaf stems, and water to a pressure cooker. 2️⃣ Pressure cook for 6 whistles. 3️⃣ Allow the pressure to release naturally. 4️⃣ Separate the cooked drumsticks and other ingredients from pressure cooker. Blend the drumstick together with the cooked tomatoes, onions, garlic, lentils, until smooth. 5️⃣ Strain the blended mixture to obtain a silky, smooth soup. 6️⃣ Heat the coconut oil in a pan. Add the vadagam and sauté until fragrant. 7️⃣ Add the shallots and sauté until lightly golden. 8️⃣ Pour in the strained soup.
