CHANFANA para 40 pessoas em AMARANTE —COZINHA DE FOGO com o chef PAULO MAGALHÃES
There are unrepeatable days, and this was definitely one of those days. In Amarante, I sat at the table with Chef Paulo Magalhães, not in the restaurant, but in the land where it all began. The farm, the family, the fire. I invited my friends and Paulo invited his friends; in the end, we were friends with everyone. We gathered forty people and got up very early to prepare everything. In the cast-iron pot, we made a lamb stew. Alongside it, boiled potatoes and rice with wild mushrooms harvested the day before, still smelling of fresh earth. It was a day of traditional cooking, where I learned more by listening than by talking. Where you realize that before the dish, there's a whole story. I met Paulo less than a year ago, and we quickly created a great connection. This year, Chef Paulo Magalhães will be the chef for the 2nd edition of Tascologia. 🍲 WHAT YOU WILL FIND IN THIS VIDEO Traditional lamb stew cooked over a wood fire. Cooked in a cast-iron pot. Rice made with wild mushrooms harvested the day before. A lunch for 40 people. The roots of a chef who cooks with memory and simplicity.
