I went to eat rojões (a traditional Portuguese dish) at Restaurante Fortaleza, in São João de Loure, a village in the municipality of Albergaria-a-Velha. Dona Graça has been there for 29 years. She makes rojões the way she always has, the way she learned from her mother and grandmother. With quality meat, seasoned only with salt and cooked over a good fire. She told me where the meat comes from, how it's prepared, and what really matters to make the rojões taste like they used to. This isn't just a typical dish from the Baixo Vouga sub-region.
