Recipes with the Taste of Málaga: Borrachuelos, with Ángeles Ballesta. Ingredients: • 380 g strong flour • 370 g all-purpose flour • 100 g lard • 50 g sugar • 15 g aniseed • 15 g ground cinnamon • 10 g sesame seeds • 1/4 L white wine • 1/8 L sweet wine • 1/8 L extra virgin olive oil • 1/8 L • 500g sunflower oil • 500g angel hair pasta for the filling • Extra virgin olive oil for frying • Orange peel to infuse the extra virgin olive oil for frying • Sugar for coating the borrachuelos Preparation: • Pour the oils into a pan along with the sesame seeds and aniseed and let it heat for a few minutes. • In a bowl, combine the lard, cinnamon, sugar, and the oils with the seeds. • Begin whisking. After a couple of minutes, add the wines. • Gradually add the flours while whisking. • If necessary, adjust the consistency with a little extra flour. • Heat the oil for frying the borrachuelos. • Add an orange peel to the oil for a few seconds to infuse it with aroma. • Roll out the dough, shape it into cylinders, and cut into pieces about 3 centimeters long. • Flatten the dough with a rolling pin. • Fill with angel hair pasta and seal the fritters. • When the oil is very hot, fry the fritters. • Remove, draining well, and coat in sugar.
