This Kind of Cooking, episode 5. - Avo Toast with Fried Eggs (no eggs, no avocados)
We made an avocado toast with fried eggs - but without avocado and eggs. Why? Because we can! Now you might (maybe rightfully) ask: why do vegan people want to mimic non-vegan food? First of all, because it’s fun! And - question right back at you -, why do non-vegan people tell us vegans what to eat and what not to eat? Secondly, people go vegan for different reasons. Some of us never liked meat, but some were obsessed with it. Some of us were addicted to cheese, others couldn’t imagine giving up eggs. But we did, because for us, the most important thing is not to harm or abuse animals, and not to contribute to the industry. And as for the question of why we didn’t use avocado… Well, in some countries it’s expensive, doesn’t grow locally, and you can’t find it all year round. And again, why not be creative when we can? Maybe you’ll change your mind… For the non-avocado spread or as we call it in our new cookbook, “Poor People’s Richest Guacamole”, we used apples for sweetness and green peas as a source of protein. You can use any greens, such as spinach, kale, or chard. Don’t skip garlic, and add coriander, parsley, or even mint for extra flavor. Obviously salt and black pepper. Squeeze a fresh lemon in and you can also pour some olive oil to make it more fatty and creamy. If you’re making a big batch, you can add zucchini or cucumber for a fresher taste. As for the eggs, we used chickpea flour and silken tofu, with a good amount of turmeric for coloring the yolk, and fresh orange juice. You can also use only tofu or lentil flour.
