Let us introduce you to one of the most legendary (and often vegan) creations of Greeks: the #spanakopita! A traditional savory, baked pie, prepared and served in various shapes. Crunchy and crispy on the outside, soft and satisfying inside. Some people eat it in the morning, some as a side instead of bread, others pick one up as a snack any time of the day. A year after we moved to Greece, we suddenly understood we both put on weight. Yes, we could excuse ourselves with saying: it’s the olive oil, the Ouzo, the once-upon-a-time pandemic, but the major part of the blame went to the spanakopita. In this new episode of our cooking show, #ThisKindOfCooking, we are showing you how to make it gluten free! The pastry will be replaced with Indian papadams, made of mung beans flour, and the filling is enriched with vegan feta.
