This Kind of Cooking, episode 6. - The Perfect Fried Chick'n (Made from Oyster Mushrooms)
The Perfect Fried Chick’n doesn’t contain chicken at all! This dish is crunchy, tender, salty, messy in the best way, and dangerously good. The real secret is the perfect texture. And no, we’re not using some mysterious store bought meat substitute. The hero here is the humble oyster mushroom. Naturally savoury, beautifully juicy, easy to find, and wonderfully chicken-like - without the guilt of contributing to the industry. To prep the mushrooms, tear them into random, bite-sized pieces, following their natural texture. Not too big, not too tiny. Brush them with umami-rich marinade: soy sauce, mustard, balsamic vinegar, tomato paste, and a bit of oil. Now set up three bowls. In the first: flour - optionally gluten free - with smoked paprika, turmeric, ginger, chilli, salt, and pepper. In the second: chickpea flour mixed with water, baking soda, and optional kala namak - Himalaya salt that gives an eggy flavour. In the third: breadcrumbs, or crushed cornflakes / panko / oats / coconut or almond flakes / crushed peanuts, and nutritional yeast. Heat oil, or use an air fryer. Gently stick together mushroom pieces with extra chickpea flour, and coat them in the three bowls. Then fry on medium heat until gloriously golden brown and crispy on every side, and cooked through. Stuff them into a burger, or dip them in guacamole, add some chopped pickles, or shower it with extra barbecue sauce. God, just writing all this down made us so damn hungry!
