Ashure is a unique and incredibly healthy Turkish dish that has become a true symbol of health, abundance, and prosperity. It is a wonderful dessert porridge that harmoniously combines grains, legumes, dried fruits, and nuts. The history of this delicacy is surrounded by legends. The oldest of them claims that Noah himself prepared the first Ashure during the Great Flood from the leftovers on the ark. This is why it has a second name—"Noah's soup." In Turkey, this dish is prepared only once a year—30 days after Eid al-Adha, during a period known as the "month of Ashure." Traditionally, a prayer is recited over the finished dish, asking God for well-being, health, and prosperity for the entire year ahead. Ashure is always cooked in huge pots and then generously distributed among relatives, friends, and neighbors.
