Recipe for a flavor base (essence) for 2 liters of finished vermouth. What you'll need (besides the herbs) 1. Wine - 2 x 0.75 liter bottles (1.5 liters total). Dry, semi-dry white, or red wines are ideal. Alcohol for extraction (vodka or 40-50% alcohol/distillate) - 250-300 ml. Sugar - 150-200 g (for the syrup). Spices (per 250 ml of alcohol) • Wormwood - 3 g (about 1 level teaspoon) • Yarrow - 2 g (slightly less than a teaspoon) • Dried orange peel - 3 g (half a teaspoon) • Juniper berries - 3-4 berries (lightly crush) • Cardamom - 2-3 pods (open, you need the seeds) • Coriander - 1-2 g (small pinch) • Cinnamon - 1/3 stick (or a small pinch of ground) • Peppermint - 1-2 g (pinch) • Chamomile - 1-2 g (pinch) • Thyme - 1 g (small pinch) • Cloves - 1-2 buds • Nutmeg - on the tip of a knife (literally a speck of dust) • Ginger (dried) - small pinch • Vanilla (or vanilla sugar) - on the tip of a knife • Bay leaf - 1/3 of a small leaf • Black peppercorns - 2 pcs.
