Recette de la brioche chinois ou schneckenkuchen - 750g

Who hasn't dreamed of making that delicious brioche from our childhood? Thanks to this recipe for Chinese brioche, or Schneckenkuchen, it's possible! Enjoy a soft brioche filled with pastry cream and chocolate chips. Recipe for 4 people Ingredients: The dough: 400 g all-purpose flour (T45 or T55) 1 packet vanilla sugar 60 g sugar 4 eggs 25 g fresh yeast or 1 packet active dry yeast 180 g melted butter 1 tsp salt 3 tbsp water 1 egg yolk for glazing Pastry cream: 2 egg yolks 75g sugar 250ml milk 20g cornstarch 1 packet vanilla sugar 25g butter 100g chocolate chips Preparation: The dough: In a bowl, place the flour. Make a well in the center: add the yeast that you have previously mixed with the water. Add the sugar, vanilla, salt, eggs, and melted butter. Mix everything together with your hand. You will obtain a sticky dough, and that's normal. Place the dough on a floured work surface and begin kneading for 10 minutes without stopping. Form a ball and return it to the bowl. Cover it with a tea towel and let it rise for 2 hours in a draft-free place. Pastry cream: In a saucepan, combine the egg yolks, sugar, and vanilla. Whisk the mixture briefly, then add the cornstarch and whisk again. Gradually add the warmed milk. Place the saucepan over low heat and whisk until the mixture thickens into a cream. Let it cool slightly, then whisk in the butter. Pour the cream into a bowl, cover with plastic wrap, and let it cool completely. Shaping: Deflate the dough, then roll it out to a thickness of 5 mm. Spread the pastry cream over the dough and sprinkle with chocolate chips. Roll the dough up lengthwise into a log, then cut into 4 cm thick slices. Butter a 24 cm diameter sponge cake pan and arrange the rolls in it, spacing them apart. Let rise at room temperature for 1 hour. Baking: Preheat your oven to 180°C (350°F). Whisk the egg yolk in a bowl with a fork. Using a pastry brush, lightly brush the top of the brioche with the egg yolk. Bake for 30 minutes, checking for doneness.
