All-purpose flour • 100 g. Water • 0.5 g. Instant dry yeast Bread dough: • 250 g. Biga sourdough • 200 g. All-purpose flour 10.4 proteins • 120 g. Milk • 3 g. Yeast • 5 g. Salt • 25 g. Sugar • 30 g.
