This sweet and sour sauce with slightly smoky notes pairs perfectly with pork, chicken, turkey, shashlik, sausages, baked potatoes, and many other dishes. In this video, I'll show you the step-by-step preparation of homemade apricot sauce without preservatives or colorings. The recipe is simple, and the taste is so delicious that you'll never want to buy store-bought sauce again. Ingredients (for 4 250 ml jars): 1. Apricots (pitted) – 1 kg. 2. Onions - 150 g. 3. Garlic - 20 g. 4. Sweet and sour apples - 150 g. 5. Tomato paste - 70 g. 6. Sugar - 30 g (add more to taste). 7. Salt - 12 g. 8. Apple cider vinegar - 30 ml (start with a teaspoon). 9. Honey - 2 tablespoons (optional). 10. Soy sauce - 1 cup. 11. Teriyaki sauce - 1 cup. 12. Vegetable oil - for frying. Spices: 1. Smoked paprika - 1 tsp. 2. Sweet paprika - 1 tsp. 3. Ground black pepper - 0.5 tsp. 4. Ground coriander – 0.5 tsp. 5. Dried garlic – 0.5 tsp (optional). 6. Dried basil – 1/3 tsp. 7. Hot pepper – optional. 8. Cinnamon – on the tip of a knife. 9. Bay leaf – 1. 10. Cloves – 1. The amount of spices can be adjusted to suit your taste. Directions 1. Prepare the apricots and remove the pits. 2. Chop the onion and apples. 3. Fry the onion in vegetable oil until soft, adding a little sugar. 4. Add the apples and fry for another 5 minutes. 5. Add the apricots and simmer, covered, for about 20 minutes. 6. Add the garlic, tomato paste, salt, spices, soy sauce, and teriyaki sauce. 7. After 10 minutes, remove the bay leaf and cloves. 8. Blend the mixture until smooth. 9. Simmer for another 10 minutes. 10. Add apple cider vinegar, adjusting the sugar taste if necessary. 11. Finally, add honey and mix well. 12. Pour the sauce into sterilized jars and seal tightly. 13. For long-term storage, sterilize the jars for 10 minutes and leave to cool in water. Helpful Hints ✔ If the apricots are very sweet, you can slightly increase the amount of apple cider vinegar. ✔ If the sauce is too tart, add a little more sugar or honey. ✔ For a thicker consistency, simmer the sauce for a few more minutes after blending. ✔ The amount of spices can easily be adjusted to create your own homemade sauce.
