High-Protein Vegan Casserole, Easy Dairy-Free & Gluten-Free Dinner Recipe, Mrs vegan Vegan Baked Cauliflower and Quinoa Casserole 🥦🍲 Ingredients ✅ For the Base: • 2 cups cauliflower florets 🌿 • 2 tbsp olive oil 🫒 • ¼ tsp salt 🧂 • ¼ tsp paprika 🌶 • 1 cup green beans, chopped 🥬 • ⅓ cup quinoa 🍚 • 1 vegetable bouillon cube 🟡 ✅ For the Sauce: • 2 tbsp vegan butter 🧈 • 1 clove garlic, minced 🧄 • 2 tbsp cornstarch 🌽 • 1 cup plant-based milk 🥛 • 3 tbsp vegan parmesan cheese 🧀 • ¼ tsp salt 🧂 • ¼ tsp paprika 🌶 • 1 tbsp lemon juice 🍋 ✅ For Topping: • 1 tbsp vegan parmesan cheese 🧀 Instructions 1️⃣ Prepare the Vegetables: • Wash and chop the cauliflower into small florets. Dry them with a towel. 🏵 • Heat 1 tbsp olive oil in a pan and sauté the cauliflower until golden brown. 🔥 • Sprinkle with salt and paprika, then set aside. • In the same pan, add 1 tbsp olive oil and sauté the chopped green beans until slightly crispy. 2️⃣ Cook the Quinoa: • Rinse the quinoa thoroughly. • In a pot, add the quinoa, ⅔ cup of water, and the vegetable bouillon cube. • Cook over medium heat until the water is absorbed. Fluff with a fork. 🍚 3️⃣ Assemble the Casserole: • Lightly grease a baking dish with olive oil. • Spread the cooked quinoa evenly and press it down firmly. 🔽 • Add a layer of cooked red lentils (pre-cooked) and press it down again. • Arrange the sautéed cauliflower and green beans on top. 4️⃣ Make the Sauce: • Melt the vegan butter in a pan over medium heat. 🧈 • Add the minced garlic and sauté until fragrant. • Gradually whisk in the cornstarch, stirring continuously. • Slowly pour in the plant-based milk, stirring constantly to avoid lumps. 🥛 • Add vegan parmesan cheese, salt, paprika, and lemon juice. Mix until thick and creamy. 5️⃣ Bake the Casserole: • Pour the sauce evenly over the cauliflower and beans. • Sprinkle with extra vegan parmesan cheese. • Bake at 200°C (390°F) for 20 minutes until golden brown on top. 🔥 6️⃣ Serve & Enjoy! • Let it cool slightly before serving.
