To make this recipe: Ingredients: • 12 large, extra-fresh langoustines • 1 green apple • 1 large avocado • 8 cherry tomatoes • 2 tablespoons of olive oil Steps: 1 - Remove the heads and shells from the langoustines*. Remove the dark vein running along their backs. Dice the flesh. 2 - Wash the apple, cut 8 very thin slices from the core, and drizzle them with a few drops of lemon juice. Dice the remaining apple, tomatoes, and avocado. Gently mix everything together with the remaining lemon juice and oil, then season with salt and pepper. 3 - On individual plates, place an apple slice, a tablespoon of tartare, a second apple slice, and then a second tablespoon of tartare. Garnish as desired. You can freeze them to make shellfish stock.
