Cut the grapefruit, removing all the pith, and segment it. Squeeze the remaining grapefruit for its juice. Dice the apple. Pour the grapefruit juice over the apple. Marinate the remaining grapefruit in olive oil with a pinch of sea salt and mix. Cut the romaine lettuce in half and soak it in cold water. Finely chop the spring onions and mix them with the diced apple. Squeeze the juice from one lemon and mix it with the yogurt. Add sea salt and black pepper. Combine the yogurt mixture with the apple and onion mixture and stir everything together. Roast the langoustines in a mixture of olive oil and butter. Place the drained romaine lettuce in the center of the plate and pour the yogurt mixture over it. Arrange the langoustines on top and garnish with the grapefruit caviar.
